Grain free evenings make for an easy gut, especially during the summer months.  Try it.

Summer.  New job, purposeful path, constantly balancing my important relationships and my essential sleep.  Where does dinner fit in? Has to. Non-negotiable.  Ordering in, no matter how many healthy options exist these days, does not give you control on how you are feeling.  The salt intake and lack of a quick cathartic chop and broil makes me feel less connected.  

Where does guacamole fit into this?  I thought I would share a quick, let it saute while you are unwinding from your day, throw an egg on top- meal.  Guacamole seemed to overshadow this time and time again, as a pot of this easy to digest, a good fat friend, can be made in a bigger batch and stored for breakfast or lunch the next day, if you can exercise portion discipline.


Summer is simple:  Guac, crudite ( cukes and zuchiini or a few radish slices please) and a quick 6 ounce portion of fish, seared in ten.  That's dinner and it makes sense.  

Guacamole

2 ripe Hass Avocados (large)

2 Limes

1 handful Cilantro

1/2 clove garlic

1 each Roma tomato

1/4- 1/2 tsp Cumin

1/2 tsp Sea Salt

1/4 tsp Pepper

1 small wedge Red Onion, Chopped (1/4 cup)

1/2 jalapeno chopped

2 shakes Cholula 

1. Remove pits from avocados and scoop into bowl on top of 1/2 clove minced chopped garlic.

2. Sprinkle on lime juice, reserving 1/2 lime for wedges.

3. Sprinkle on cumin, sea salt and black pepper with hot sauce.

4. Chop cilantro and add.  

5. Dice jalapeno and tomato, add with chopped red onion.

6. Mash roughly with a fork and enjoy.

SERVE WITH

Radish slices, cucumber slices, zucchini slices and carrot sticks.
